Rinse the beef and place it in a pot with a little water and the bay leaves. When foam forms, skim it off. Let it cook over low heat for 20 minutes.

In another pot, cook the cleaned and seeded chiles. Once softened, transfer them to a blender with all the spices.

Blend well with water, then add the mixture to the pot with the beef. Strain if needed, cover, and cook for about 1 hour over low heat. Remove the beef, shred it, return it to the pot to mix well, and check the seasoning.

For the gorditas: Add a splash of water and a little salt to the masa, then shape into gorditas. Cook them in a skillet. While they're still hot, carefully open them up (it's hard to do once they cool). Set aside.

Fill the gorditas with the beef mixture, then fry them in a little oil and some of the beef juices until they turn a reddish color. Once crispy, remove them and top with lettuce and cilantro. I like to add salsa. Finish with Manchego cheese and enjoy with someone special 😁
