Savory Pastries with Vegetables and Tuna, Delicious in Sanae El Khokhi's Style
Steps
- 1
In a bowl, combine flour, salt, sugar, yeast, and warm milk. Mix the ingredients and add water as needed to form a soft and cohesive dough. Let it rest while you prepare the filling.
- 2
In a skillet, cook the carrot, zucchini, onion, and bell peppers with a little oil over heat until the vegetables soften. Add salt, black pepper, chopped cilantro, chopped green olives, and drained tuna. Mix well, remove from heat, and let cool. Divide the dough into 6 balls, using a little oil. Mix a tablespoon of melted butter with a little oil, flatten the balls, brush with the butter-oil mixture, and shape into square pastries. Repeat for all dough balls.
- 3
Take the first square, flatten it, and cut into 4 pieces with a knife. Place a little filling in the center of each piece, fold the sides as shown in the pictures, and shape all the dough in the same way. Place them on a baking sheet, score the tops with a knife, and brush with a mixture of egg and a little vinegar. Bake in a preheated oven at 400°F (200°C) from the bottom until cooked, then brown the tops. Enjoy!
