First, chop all the vegetables and wash them thoroughly. Finely chop the onion and tomatoes.

Dry roast all the whole spices and grind them into a fine powder using a blender or spice grinder.

In the blender, add tomatoes, green chilies, Kashmiri red chilies, ginger, and garlic. Blend to make a paste.

Heat 2 tablespoons of oil in a pan and shallow fry all the vegetables. Remove and set aside.

In the same pan with the remaining oil, add 1/2 tablespoon fennel seeds and the finely chopped onion. Cook until golden brown. Then add all the ground spices, turmeric powder, chili powder, and the roasted spice mix. Mix well and cook on low heat.

When the masala starts to release oil, add the ground cashew paste, milk, cream, or yogurt. Mix well, then add all the fried vegetables and salt to taste. Mix everything together and cook for 2 minutes.

Add water as needed and mix the vegetables well. Once it comes to a boil, cook on medium heat for 5 to 6 minutes. When the gravy thickens, turn off the heat.

Your hot Veg Kolhapuri is ready. Garnish with chopped cilantro.
