Ingredients

1medium fennel
3/4 cupwater
3/4 cupwhite wine vinegar or any other clear vinegar
1/2 tspfennel seeds
1/2 tspsalt
1/2sugar
1/2pink peppercorn
1/2 tspblack peppercorn

Slice your fennel and place in a jar. Prepare your pickling liquid by placing the remaining ingredients in a saucepan and bring to simmer. Pour over the fennel slices and cover.
