Ingredients

30 minutes
2 servings
  • 1 cupoats
  • 1 tspmustard seeds
  • 1 sprigcurry leaves
  • 1medium onion chopped
  • 1 inch ginger chopped
  • 8-10 garlic cloves chopped
  • 1-2chopped green chillies
  • 1/2 cupchopped mixed vegetables (carrots, beans, peas, and corn)
  • to tasteSalt
  • 1/2 tspKashmiri red chilli powder
  • 1 tspjeera / cumin powder
  • 1 tspdhania ( coriander)powder
  • 1 tspamchoor( dry mango) powder
  • 1/2 tspturmeric powder
  • 1 tbspoil
  • 1 tbspchopped coriander for garnish

Steps

30 minutes
  1. 1

    To begin, dry roast the oats until crisp. Be careful not to brown them too much. Remove and keep aside.

  2. 2

    In the same pan, heat 1 tbsp of oil. Sesame oil works best for this recipe.

  3. 3

    Add in mustard seeds and allow them to crackle. Add in the curry leaves.

  4. 4

    Next, add in the chopped green chillies, garlic, and ginger followed by half of the onions. Cook until onions are translucent.

  5. 5

    Add in the vegetables and cook until a bit tender.

  6. 6

    Add in salt, red chilli powder, turmeric powder, jeera powder, dhania powder, and amchoor powder.

  7. 7

    Add in the roasted oats and mix well.

  8. 8

    Add in a cup of water. Cook for a few minutes until it forms the consistency you prefer. My family likes a drier version. That requires a bit longer cooking time.

    Add in the remaining onions and mix well.

  10. 10

    Garnish with chopped coriander leaves and serve hot.
