Ingredients

5 minutes
  • 1Asian long eggplant
  • Seasonings (to taste):
  • Garlic
  • crushed red pepper
  • soy sauce
  • vinegar

Steps

5 minutes
  1. 1

    Half the eggplant length wise, cut into 3-4 in long pieces

  2. 2

    Arrange eggplant in a single layer skin side up on a plate, cover and microwave for 4 minutes

  3. 3

    Mix all seasoning and drizzle on the eggplant and serve
