Cheesecake is a sweet dessert consisting of one or more layers. The main, and thickest, layer consists of a mixture of a soft, fresh cheese (typically cottage cheese, cream cheese or ricotta), eggs, and sugar. If there is a bottom layer, it most often consists of a crust or base made from crushed cookies (or digestive biscuits), graham crackers, pastry, or sometimes sponge cake. You can enjoy this recipe when it’s chilled.

Cooking Instructions

Preheat oven to 350ºF (180ºC).

In a bowl, add the crushed graham crackers and melted butter and stir to combine.

Place the graham cracker mixture in a greased 8-inch (20-cm) springform pan, spreading them in an even layer. Bake for 20 minutes or until in turns slightly golden on the top.

In a bowl, mix the cream cheese and sugar using a hand mixer until smooth.

Add the eggs and vanilla, and continue beating until all ingredients are fully incorporated.

Add the cream cheese mixture to the top of the graham cracker crust.

Refrigerate for 12 hours, or overnight.

Top it with Mixed Berry and Jam
