Crispy and crunchy crepes made with a thin semolina or sooji/rava batter, flavored perfectly with cumin, curry leaves, green coriander and salt.

It is served with a yummy potato masala and three delicious South Indian chutnies

The white one is a classic coconut chutney, the green one is a peanut coriander chutney and the red one is a tomato onion chutney.

It makes for a yummylicious breakfast and is best enjoyed just off the girdle.

Ingredients

30- 35 minutes
makes 10 servin
  • 3/4 cupsooji or rava
  • 1/2 cuprice powder
  • 1/4 cupmaida/ All-purpose Flour
  • 1 TSPsalt
  • 1/8 TSPbaking soda
  • 3 cupschilled water
  • 3 Tbspchopped green coriander
  • 4-5 tbspghee for roasting the dosa
  • Tempering
  • 2 tbspoil
  • 1/2 Tspmustard seeds
  • 1/2 Tspjeera/ cumin seeds
  • 1/2 Tspvery finely chopped green chillies
  • 1/2 Tspvery finely chopped ginger
  • 2 tbspchopped curry leaves

Steps

30- 35 minutes
  1. 1

    Mix Suji, maida, rice powder and salt in a big bowl. Keep aside.

    For tempering, heat oil in a pan. Add mustard seeds. Once it crackles add jeera. After jeera turns golden add green chillies, ginger and curry leaves. Mix and remove from fire.

    Add the hot tempering to the flour mix. Mix very nicely with a spoon.

    Add meetha soda and coriander. Mix again.

    Heat a dosa tawa or any other tawa. Add 2.5 cups of water to the mix. Mix it very well using a whisk to get a thin batter.

    Once the tawa is very hot. Rub some ghee on it with a half onion.

    Now stir the batter as the flours and spices tend to settle. Pour a Karachi full batter on the tawa from a height at least four inches. Pouring from a height gives that lacy dosa. Pour more batter on the sides to get a big dosa. Do not spread the batter.

    Now cook till dry on the top pour some ghee on the top and sides. Do not turn till well browned on the bottom. Turn and cook for a minute.

    To make other dosa stir the batter nicely every time. Also the batter thickens on keeping so keep adding chilled water to maintain the thin consistency. But do not add too much water.

    Serve with aloo masala and chutneys on the side.
