Healthy Japanese-Style Potato Salad Without Mayonnaise For Bento

I ran out of rice to put in my son's bento box so whipped up some potato salad (without mayo!) to fill it out.
I remembered a macrobiotic recipe for mayo and rushed to make some but I was told it was tasty enough without.
I make my potato salad with non-flavoured soy milk and it tastes delicious.

When you're mixing the miso and milk, by all means try doing it in a plastic bag, it makes everything so stress-free!

When you're mashing the potatoes, try to mash them as quickly as possible.

The cooks at a popular restaurant called Moku Moku Farm don't peel the potatoes in their popular potato salad. Ever since I tried it at home, I haven't peeled mine either . Recipe by Nikonikomakki-

Ingredients

3 servings
  • 2 mediumPotatoes (new potatoes if you have them)
  • 1 tbspShio-konbu (I use low-sodium)
  • 2 tsp☆Vinegar
  • 3 tbsp☆Milk (soy milk)
  • Mix together:
  • 1 tsp*Miso
  • 1 tbsp*Milk (soy milk)
  • To finish:
  • 1lots Ground sesame seeds

Steps

  1. 1

    Heat the potatoes whole in the microwave for 5 minutes at 600 W. If you want to peel the potatoes, you can do it after warming them. I like to eat the skins though.

    Add the * ingredients to a plastic bag and completely combine the ingredients while rubbing them together I find this to be the quickest and most effective method for mixing.

    Once the potato is soft enough to be pierced all the way through with a fork, mash them ♪ While they're still hot, add the ☆ vinegar and ☆ milk and mix.

  4. 4

    Add the miso mixture from Step 2 into the potato mixture from Step 3 and combine well Mix in plenty of ground sesame seeds and season with salt and pepper to finish.

  5. 5

    I try to come up with recipes that are good for your beauty and use healthy ingredients such as shio-koji, black vinegar, shio-konbu, kiriboshi daikon, lotus root, nagaimo yam, avocado, tomato, okra, celery, and yakitamago omelettes Take look at my other creations!
