Ingredients

2.5 hours
6 servings
  • Halfa stock pot of turkey stock, at least 4 jars or 7 deli tubs
  • 1turkey thigh (de-boned, skinned and chopped into small cubes)
  • 2large onion
  • 3 cupsdiced carrots
  • 3 cupschopped celery
  • 2 cupsfrozen peas
  • 5 clovesgarlic (crushed)
  • 4Bay leaves
  • 2 teaspoonsthyme
  • 1.5 teaspoonsalt
  • 1.5 teaspoonpepper (1 teaspoon for Andrea)
  • as neededOlive oil
  • Noodles of choice, or brown rice

Steps

  1. 1

    Saute the onion, carrot, and celery in some olive oil for 5-7 mins until onion is soft

  2. 2

    Add crushed garlic and peas, saute for 2 more mins

  3. 3

    Add stock cubes, turkey, stock, and all seasonings.

  4. 4

    Cover and simmer for 2 hours on back burner

  5. 5

    Add frozen peas, and then simmer for 30 more mins

  6. 6

    Prepare noodles or rice separately to add to individual bowls.
