Ingredients

  1. 500 gcooked (in stock) medium-size prawns, chilled
  2. 1/2large cucumber diced
  3. 1small tomato diced
  4. 8spring onions thinly sliced
  5. 1good handful of fresh coriander, finely chopped
  6. 1chilly thinly sliced
  7. 1/3of a jar Passata
  8. 2 tablespoonsred wine vinegar
  9. 1lime
  10. 2 tablespoonssweet chilli
  11. 1 teaspoonfish sauce
  12. For serving shredded lettuce or sliced celery
  13. stock
  14. Peel the shrimp:
  15. Shrimp shells
  16. 4 cupswater
  17. 1 tablespoonsugar
  18. 2 tablespoonskosher salt
  19. Whole-cell and throw
  20. 1 inchpiece of ginger (peeled)
  21. 1red chilli - more or less to taste
  22. 1lime peel

Steps

  1. 1

    Bring the stock to a boil at the shrimp and cook for 8 to 10 minutes then strain and place in iced water

  2. 2

    In a large bowl combine chilled prawns, cucumber, tomato, spring onion, coriander and chilli.

  3. 3

    Stir in Passata and vinegar.

  4. 4

    Squeeze lime juice over the mixture.

  5. 5

    Serving glasses with the shredded lettuce or slices of celery
