Homemade Sriracha (Smokey Rooster Sauce)

Since Sriracha sauce is made with ripe red jalapeños, garlic powder, sugar, vinegar, and salt; and ripe jalapeños are nearly impossible to get at the grocery, I decided to use the next best thing, chipotle jalapeños. It is comparable in heat to Rooster Sauce and there is also a nice smokey flavor from the smoked red jalapeños.

Assemble all of your ingredients. Add vinegar, water, salt, garlic powder, and sugar to a saucepan.

Bring the brine to a boil, allowing the garlic powder to bloom and the salt and sugar to dissolve.

Add the can of chipotles in adobo sauce to a blender. Pour in the hot vinegar brine and pulse to desired consistency.

Decant into suitable containers that have been washed, soaked, and sanitized in a soapy, weak, bleach solution. Cool and store. Use anywhere you would use sriracha.
