Place the chicken cutlets, cut into pieces, in the kitchen robot and mix for 40 seconds at speed 4.

Add the shredded Swiss cheese, flour, 2 eggs, 2 teaspoons salt (or to taste), and pepper to the robot. Mix for 30 seconds at speed 5.

Divide the mixture into 24 portions.

Take some plastic wrap (or wet your hands to prevent sticking) and flatten 2 portions with your palm to form 2 half circles or rounds, depending on your preferred shape.

Bring the 2 flattened portions together, place ham and cheese in the center, fold with the plastic wrap, and shape your cordon bleu by gently pressing the edges to seal.

Cover a baking sheet with a silicone mat or parchment paper and brush well with oil.

For the breading, place the breadcrumbs in one bowl and beat the remaining 2 eggs in another. Dip the cordon bleus first in the egg, then in the breadcrumbs, and place them on the oiled baking sheet.

Bake at 350°F (180°C) for 25 minutes, turning halfway through.

I froze half of the cordon bleus and ate them later by thawing overnight in the fridge, then reheating in a skillet with a mix of oil and butter. Enjoy!
