Zucchini & aubergine curry

Courgette or zucchini which do you call it?here add zucchini, carrot roasted aubergine optional,and cilantro.with some spices .. add dry chilli garlic ginger fresh or tind tomato, equal prop with the chopped vegg (this is base of masala and will provide da curry base if enof thickness and not dry no need add water ,otherwise you may need to add only some water to aid cooking the carrots and making it come together. and then the spices with cumin bit of fennel seeds and dry chilli .temper them first..not let burn and add in da onions leave abit .then for tomatoes and lastly your vegg according to cut sizes and what first and also other powder spice paprika powder turmeric bit of chilli flakes and cilantro at end .do we need to add lemon to help zucchini slippery or bpowdr .here we added some lemon juice then shallow fried.. this helped these not to be soggy. Alhamdulillah... how you like or prefer for veggies !so you can try different ways and see what works best and will hav best results #Ramadhan2021,#kitchenbingo

Ingredients

  1. 1medium large zucchini/courgette
  2. 1medium large dark purple aubergine
  3. 1medium large white onion
  4. 2/3 canchopped tomatoes
  5. Large Handful or two fresh coriander
  6. 3medium size preferably thin carrots or organic ones
  7. Halfmug Water
  8. Halfmug cooking oil(for initial Shallow fry,reduce later)
  9. Red chilli for garnish
  10. Coriander for garnish
  11. Spice:bit of garlic to taste, 1 tbspn plain paprika pwdr,turmric
  12. Spices:Half tspn turmeric powder
  13. 1tspn red chilli flakes,1 tspn mixd masala powder (optional)
  14. Spices:1 tspn mustrd seeds optional,1 tspn fenugreek(hilba seeds
  15. Spices:1 tspn Whole cumin seeds
  16. SpiceHalf or 1 tspn,whole fennel seeds,1 tspn salt for masala
  17. Salt for aubergine 1 tspn
  18. About 2 tbspn Lemn juice for zucchini marinade before shallw fry

Steps

  1. 1

    The ingreds and marinated veggies:rince the vegg.then half then and quater then chop into wedge type.place on paper towel or clean news paper and flat tray put the salt sprinkle evenly on aubergines.leave half hour and then remove soaked papers then again half hour while you try press the piece down to remove bit more excess water from them.now can pat with paper towel from top.for the zucchini just add lime juice in a bowl and toss around and place for about half hour or so,before shallow fr

    Shallow fry the veggies.heat your pan to dry if wet,add oil and heat.at medium high heat.can reduce to medium heat if darkening too fast.then start with the aubergine heat to golden brown and skin is much darker pure almost black but not burn.remov on paper towel.do the zucchini but only until tender and the green needs to be slightly bit darker but not brown.

    The spices.using same pan you used before.reduce the oil used while shallow frying to about half or less.now add some of the spice only.not the powder spice at this stage as they will burn.stir so not to burn.briefly at medium heat.add in chopped thinly onions

    The tomatoes/masala base:add in the tomatoes after onions are soft and break down with wooden spoon.now cover and simmer until tomatoes are well cooked.stri to avoid sticking to pan.add in carrots thin sliced is better as cook faster.add about half mug of water cover.then let cook briefly.now you can add half of the rinced and chopped cilantro herbs and leave half to add at end

    Putting things together and completing the curry, Alhamdulillah.garnish with sliced red chilli and cilantro or lemon wedges.can hav with rice or breads of choice or even ugali

    Enjoy bismillah!...a note here is this can be made in advance and frozen and defrosted naturally before consuming..so it comes in handy Alhamdulillah e.g. if u hav left overs etc

Nice recipe sis. To have restaurant style taste there are tips and tricks of heat control, perfect blend of spices accurate to 1 gram level for homegeneous taste like kfc etc. do we win any prize here for good recipe ? Haha . Stay blessed. Salamz
