Soak tamarind, dates, jaggery for minimum 30 minutes

After 30 mins mash nicely, add ginger, fennel seeds and blend In mixer and strain in a bowl, add all the remaining ingredients and mix well, keep in fridge

For teekha paani, take mint leaves, coriander leaves, green chillies, ginger and blend in mixer with salt and water

Strain the green mixture in a bowl, add all dry masalas and mix nicely, add ice or chilled water to adjust consistency it should be watery

Soak boondi in water for 2 minutes and remove water

For assembling, make a small hole in puri, add some boondi in centre add sweet chutney and teekha paani and you can add sev too have a Paani Puri party with your family enjoy
