Bacon Wrapped Cheese and Garlic Potatoes

Preheat the oven to 200˚C.

Thoroughly scrub the potatoes and poke a few holes in them with a fork to vent. Brush with oil and lightly salt, bake in the oven for 50-60 minutes or until soft. Turn them over halfway.

Remove the potatoes from the oven and let them rest until they are cool enough to handle.

Cut off the ends. Using a melon baller or a spoon, carve out the center of each potato, only 2 thirds must be cut out of each potato. Place the cut out of 4 potatoes in a mixing bowl. You can throw away the rest.

Mix together the potatoes insides, two thirds of the cheese, spring onion, cream, garlic, 1 tsp salt and pepper. Fill the potatoes with the mixture and wrap a slice of bacon around each one. Secure the bacon with a toothpick.

Place the potatoes back in the oven over and bake for 20 minutes.
