Ingredients

30-40 minutes
3 large serving
  • 1 cupfine sooji
  • 3heaped tbsp chana flour
  • 2 tbspoil
  • 1 cupcurd
  • 1/4 tspturmeric powder
  • 1/4 tspcitric acid
  • 1/2-1 tspsalt
  • 1 tspcumin seeds
  • 1 tbspsugar
  • 1 tbspginger garlic green chillies paste
  • 2 sachetseno
  • For Tempering
  • 2 tbspoil
  • 1 tspmustard seeds
  • Few green chillies
  • 1/8 tspasafoetida powder

Steps

30-40 minutes
  1. 1

    Combine all the dry ingredients very well. Add oil and combine well again.

    Add ginger garlic paste, curd and water. Combine and rest for 15-30 mins.

    Prepare steamer. Grease the plate with oil. Let it heat up in the steamer. Wait till the steamer is hot and full of steam. Divide the batter into two parts. Add 1 pkt eno in one part and pour 2-3 tbsp water over it. This will activate the eno and create a lot of bubbles.

    Quickly, but gently combine everything very well in order to spread the air bubbles all over the batter evenly. Pour the batter in the plate right away.

    Spread evenly and cover the steamer quickly. Let it cook on medium to high flame for minimum 15-20 min. Remove the plate from the steamer then after and rest aside for atleast 5-10 min to cool down a bit. Meanwhile, let the steamer heat up again. you may have to refill some eater. Follow steps 3 to 5 for the second batch.

    Prepare tampering...heat up oil for tampering. Add mustard seeds and let them crackle. Turn off the stove. Add cumin seeds and let them turn brown. Add green chillies, asafoetida powder and curry leaves.

    Make Criss cross cuts in dhokla. Pour the seasoning over dhokla spreading it evenly. Gently remove the pieces with a sharp spetula and serve with Gujarati green chutney.

    Measurement for 1 plate..
    ½ cup batter, 1 tsp eno, 1tbsp oil for tampering
