Okara Cookies

Store-bought okara cookies are expensive.
So I made them myself.

The dough is rather dry, so be careful not to let it fall apart in Step 4. Eat this with plenty of water. It'll fill you up.

If you don't dry-fry the okara, and replace the artificial sugar for honey, you'll have sweet and rich cookies. "They turn out like "Country Ma'am" cookies). Recipe by Kimiko

Ingredients

  1. 250 gramsFresh okara
  2. 3 tbspWhite flour
  3. 20 gramsButter
  4. 2 tbspArtificial sweetner (Lakanto or sweetener)
  5. 1 mediumor small Egg

Cooking Instructions

    Saute the fresh okara in a frying pan until crumbly. Do not use oil.

    Stir in the butter and artificial sugar well, and add in the egg.

  3. 3

    Add the flour and Step 2 into Step 1, place into a plastic bag and knead well, flatten, and chill in the freezer for about an hour.

    Cut the plastic bag open, and then cut the dough into whatever size you prefer.

    Bake in an oven preheated to 170°C for 20~25 minutes.
