  1. 1/2large onion, chopped
  2. 1celery, diced
  3. 2garlic cloves, minced
  4. 1 cupdiced carrot
  5. 1 quartchicken stock (or vegetable)
  6. 2 cupswater
  7. 1 poundcabbage, shredded and chopped
  8. 3 tablespoonstomato paste
  9. 1 poundwhite potatoes, peeled and diced
  10. salt
  11. pepper
  12. 1-2bay leaves
  13. 1 teaspoondried thyme
  14. 1/2 teaspoondried marjoram
  15. 1/4 teaspoondill weed
  16. 2 tablespoonsapple cider vinegar
  17. 1 tablespoonHungarian paprika
  18. Creme fraiche (or sour cream to garnish; optional)

Cooking Instructions

  1. 1

    Add onion, celery, garlic, carrot, and mushrooms to pan, seasoning them with salt, pepper, bay leaves, thyme, marjoram and dill; saute until onion softens.

    Add chicken stock, water, vinegar, and tomato paste to pan and stir until tomato paste mixes in.

    Add cabbage, potatoes and paprika; bring to a boil (if not already),then lower heat, cover and simmer for about a half hour or until your potatoes and other vegetables are tender.

    Serve garnished with creme fraiche or thin sour cream if you like.
