Soak cashew and poppy seeds in 50 ml milk for about 30 min. Grind and make smooth paste of mint, coriendar, chillies. Boil potatoes and peel. Ensure not to overcook them or else they will break and get mushy. Their shape must remain intact even after boiling as shown in the pic below. Peel them.

Take 2 tsp oil in a pan. Add boiled potatoes along with all the powder spices and the green paste. combine them very well. Transfer them in a baking tray and bake them in the middle rake along with grilling at about 160c till they get slightly crunchy and the spices sticks well on them.

It is possible to skip baking. In that case let the potatoes cook on really slow in the pan on slow heat to allow them to get crisp and well quoted with the spices.

For gravy: grind cashew and poppy seeds into smooth paste. Add a little milk if required for grinding. Heat up 2 tsp oil in a pan. Add the white paste into it and fry a bit like for about 3-5 min. Add fresh cream, salt and black pepper powder. Combine them very well.

Add the remaining amount of milk to adjust consistency of the gravy. Add cheese.

You can add more milk if the gravy looks too thick. This gravy should be as thick and creamy as the white sauce or fondue. It is ready when the cheese melts and the gravy looks smooth, creamy with perfect consistency.

Combine ingredients for paratha and make semi soft dough like for paratha. Make parathas as normal.

Serve everything hot as shown in the pic. You do not have to use the toothpick to pierce through the potatoes. The potatoes can be sipped directly in the gravy or the gravy can be poured over the potatoes. Serve with parathas and onion rings drizzled with some lemon, salt and pepper.
