Fish is a healthy food. This recipe skips evaporated milk and coconut milk, using fresh milk instead for a healthier option.

Prepare the galangal, lemongrass, shallots, cilantro root, kaffir lime leaves, chili, and cilantro root.

Add water or stock and all the prepared aromatics to a pot. Bring to a boil.

When fragrant, add the Thai chili paste.

Add the smashed chili pepper.

Add the sea bass, cover the pot.

Once the fish is cooked, add the milk, then add sliced green onions, sawtooth coriander, and fish sauce.

Add lime juice just before serving.

Tip: Don’t boil the soup for long after adding lime juice, or it will turn bitter.
