A traditional dish and another one of my favorite breakfasts. Easy to make.
Steps

Chop the tomatoes, onion, garlic, and cilantro. Blend them together with the eggs for 2 minutes.

Heat the tablespoon of oil in a skillet over medium heat. Once hot, pour in the blended mixture and cook for 5 minutes, or until the liquid evaporates and only the oil remains.

Serve with white rice or your favorite white bread. Add salt to taste. Enjoy!
