Ingredients

Serves 4 servings
  • 5boneless fish fillets (I used king mackerel, but any firm white fish works)
  • 1/4 headcabbage, preferably red (I used green since I couldn't find red)
  • as neededLimes,
  • 3Roma or round tomatoes
  • 1 bunchcilantro
  • 1/4onion
  • 1 cupall-purpose flour (about 120 grams)
  • 1 teaspoonpaprika
  • 1 teaspoonground cumin
  • Salt, to taste
  • 1 teaspoonolive oil
  • Green chiles, to taste
  • 1cold beer
  • Black pepper, to taste
  • as neededTortillas,
  • 1 jarmayonnaise
  • 1small can chipotle peppers in adobo sauce

Steps

45 minutes
  1. 1

    Cut the fish into strips, pat dry, and heat a skillet with the olive oil.

  2. 2

    Mix the flour, paprika, cumin, salt, and pepper with the cold beer. When the oil is hot, dip the fish pieces one by one into the batter. Fry a few at a time so the oil stays hot, turning them when golden brown. Remove and drain on a paper towel.

    Meanwhile, make a pico de gallo by combining the onion, tomatoes, cilantro, salt, pepper, olive oil, lime juice, and green chile to taste.

    Add half the can of chipotle peppers to the mayonnaise and mix with a fork.

  5. 5

    Finely shred the cabbage, rinse it well, and toss with lime juice and salt.

  6. 6

    Warm the tortillas, then fill with the fish, pico de gallo, cabbage, and chipotle mayo. Add more lime to taste and enjoy!
