Watermelon Icebox Cookies

One of my friends made fruit-shaped cookies, so I wanted to try making my own version as well. They turned out summery and cute!
If you'd like to avoid food coloring, add in powdered strawberries or matcha instead. Make sure you properly knead the dough for the white and green colored portions. Let the dough rest in the fridge -- otherwise, it'll be difficult to handle and slice. Recipe by Maimama

Cooking Instructions
- 1
Bring the margarine to room temperature. Once softened, cream together with the sugar until the sugar has dissolved. You can quicken the process with a hand mixer.
- 2
Add heavy cream to the mixture from Step 1. Once mixed thoroughly, add the flour and combine until there are no flour streaks. Bring the dough together into a ball.
- 3
Half the dough should be colored red, while the remaining quarters should be green and plain. The food coloring can be diluted in a bit of water and mixed into the dough. Use red and green!
- 4
Roll the red ball of dough into a rope. Knead out the white ball of dough to fit the circumference of the red dough stick, and wrap it around the latter.
- 5
Repeat the step for the green ball of dough as well.
- 6
Once the sheet of green dough has wrapped around the roll of dough, sprinkle on the sesame seeds. These are intended to resemble the black striped patterns on the outside of watermelon. Chill in the refrigerator for 1-2 hours.
- 7
Cut into 7.5 mm slices. Sprinkle on black sesame seeds on the red portions that resemble the fruit. Bake in an oven heated to 170°C for 10-15 minutes.
- 8
Once baked, place them on a rack to cool off. They'll be crumbly and crunchy!
- 9
You can make cookies that look like cookies with this method, too! All you need to do is prepare 5 orange ropes of dough to wrap around a rope of dough that you leave uncolored.

This recipe is a collaboration with another recipe author. It's fine without the heavy cream.Don't knead the batter while mixing.I personally like smaller cookies better, but if you want to make them big, adjust the refrigerating and freezing time appropriately. You can store the dough in the freezer for up to 2 weeks. Refreshing Orange Icebox Cookies Refreshing Orange Icebox Cookies
I had a lot of orange peel, and so decided to make these refreshing and delicious cookies.I wanted find a way to make cookie dough that would be easy to mold into shapes, but come out crispy as well.If you freeze the dough too much, it will break apart when slicing. You only need to leave the dough in the freezer for about 20 minutes. If you leave it in longer, transfer it into the refrigerator for a bit before cutting. Recipe by En93 cookpad.japan -
Adorable Strawberry Freezer Cookies Adorable Strawberry Freezer Cookies
I made this because I wanted to make some cute strawberry freezer cookies. The cookies are crisp and moist. I generally make this with about 50 g of raw cane sugar to limit the amount of sugar my children get.If you prefer the cookies to be sweeter, just up the amount of sugar to 70 g.If you use powdered sugar, this makes the cookies more crisp. However, that makes the dough more difficult to handle. To make the dough easier to handle, I recommend using raw cane sugar or regular white sugar. If you think the dough is a bit too soft and a bit difficult to handle, put it in the freezer or fridge to firm it up. Cute Little Red Riding Hood Icebox Cookies Cute Little Red Riding Hood Icebox Cookies
I am currently experimenting with cute icebox cookies that are also crispy and delicious!I adjusted the amount of light brown sugar to suit my taste...And, I figured out how to shape the dough more easily. It takes a bit of effort, but you'll be pleased when you cut the cookies. If the dough is difficult to handle when shaping, chill it in the freezer for 5 minutes. If left in the freezer for too long, the dough will break apart easily when cut. Make sure to transfer to the fridge from the freezer after 20 minutes. Recipe by En93 cookpad.japan -
Vanilla Diamant Cookies Vanilla Diamant Cookies
This is the basic cookie I always bake. You can freeze the dough, so I often make a lot of dough when I have time, and keep them in the freezer! If you put vanilla beans instead of the oil, the cookie will be richer and more delicious. The trick is to mix the butter and sugar well! Make the mixture airy and fluffy. When you knead the chilled dough, don't hesitate and knead thoroughly! If the dough warms up, gluten develops and makes the cookie less crispy, so be careful in summer . So good! First time making them and they were moderately simple. Nice tart taste from the raspberries :) If you don't like a more bitter chocolate taste, substitute semi-sweet chips with milk chocolate chips. Another good idea is to dust with powdered sugar. Hope you try them! And enjoy them! :)EmSanders

Dairy-Free Strawberry Cookies Dairy-Free Strawberry Cookies
My youngest strawberry loving daughter has egg and dairy allergies. So I added strawberries to her favorite cookies! They are cute and popular with the kids.I guess just make sure to combine the vegetable oil, sugar, and strawberries very well in Step 2. I think the pink color of the cookies will be stronger if the batter is pink. Recipe by chi-bo- cookpad.japan
