Ingredients

  1. Asian braised beef
  2. 5 lbtenderloin chain or chuck roast
  3. 1 stickcinnamon
  4. 1 tbsp5 spice
  5. 1/2 cupsoy sauce
  6. 1/2 cupbrown sugar
  7. 1 tbspkorean chile flake
  8. 1/2 cupmolasses
  9. 3 tbspgarlic,minced
  10. 1 tbsponion powder
  11. 4 cuppineapple juice
  12. 2 eachstar anise
  13. 12 cupbeef stock
  14. 1/4 cupfish sauce
  15. 1/2 cuphoisin sauce
  16. 1 tbspseasme oil
  17. 1/4 cupsriracha
  18. Sriracha aioli
  19. 1/3 cupSriracha
  20. 1 tbsphot mustard
  21. 2egg yolks
  22. 16 ozolive oil
  23. 1/2 cuprice vinegar
  24. 2 tspsalt
  25. 1 tsppepper
  26. 1 tbsphoney
  27. Pickled daikon
  28. 1daikon root peeled
  29. 1 1/2 cupsugar
  30. 2 cuprice vinegar
  31. 1 cupwater
  32. 1 1/2 tbspkosher salt
  33. 3cloves
  34. 6pepper corns

Steps

  1. 1

    Asian beef
    preheat oven to 380
    cut beef into large cubes.
    add all braising ingredients together in a deep baking dish and cover with foil.

    braise beef in oven for 2 1/2 hours

  3. 3

    Sriracha Aioli
    place all aioli ingredients except olive oil in a blender.
    blend well for about 2 min

  4. 4

    turn blender on high and slowly pour olive oil into blender this will create an emulsion, forming our aioli.
    when finished place in sqeeze bottle and place in cooler

  5. 5

    Diakon pickles
    take peeled diakon and slice into rounds at about an 8th of an in.
    once sliced place in large mixing bowl and place aside

  6. 6

    combine all other pickling ingredients in a pot and bring to a boil.

  7. 7

    once boiling, pour over sliced diakon and place in cooler for at least an hour

  8. 8

    remove taco meat from oven after 2 1/2 hours peel back foil
    by now most of the liquid has evaporated turning into our taco sauce

  9. 9

    using a pair of tongs break up meat. now you should have saucy shredded beef

  10. 10

    plating
    i use corn tortillas tossed in the oven for a min.
    then place taco meat, pickled daikon, drizzle with sriracha aioli and top with micro cilantro
    serve with lime
