2 tbspolive oil
1/2yellow onion diced
3 clovesgarlic minced
400 gred lentils (dried and rinsed)
1large sweet potato cubed
1/2cauliflower cubed
1 candiced tomatoes (18 oz)
5 cupsvegetable broth
1 tspsea salt
1 tspcumin
1/2 tspginger
1 tsppaprika
1/2 tspground coriander
Freshly ground black pepper on top for garnish

Add olive oil, onion and garlic to instant pot and saute for 3-5 minutes, until golden brown.

Poor in remaining ingredients, stir, seal instant pot and select chili (30 minutes). Once finished, do a quick release and serve.
