Steps
- 1
Soak chickpeas overnight with water. They grow three time bigger so 1 cup chickpeas with 3 cups water. Make sure you have them in a big enough container, or bowl.
- 2
Cook chickpeas, garlic cloves, wild garlic and bay leaves together. Bring them to boil, then simmer for about 1.5 to 2 hours.
- 3
Drain and keep aside. Save a cup of aquafaba also, from the cooking liquid.
- 4
Get your food processor out and ready. First add the tahini and lemon juice in, mix for a minute or two, until it’s shiny.
- 5
Add cooked chickpeas in the food processor, mix until fine texture. Add few spoons of aquafaba in between. Taste in between. Add salt if you like.
- 6
Taste. Serve in a nice dish with olive oil on top.
