Adai Dosai - closely translated to lentil dosa. Every household have their own recipe for adai. There may be so many variations with different types of lentils, grains, seeds, vegetables etc. I find Adai an easy way to add millets, seeds like hemp, flax, chia into a meal. #talentedfoodies

Ingredients

  1. 1/4 cupToor Dal
  2. 1/4 cupMoong Dal
  3. 1/4 cupMasoor Dal
  4. 1/4 cupUrad Dal
  5. 1/4 cupRice
  6. 1/4 cupMillet
  7. 1 tbspHemp seeds
  8. 1 tbspFlax seeds
  9. 1 tbspChia seeds
  10. 2red chillies
  11. 1 tbspcummin seeds
  12. 1 inchpiece ginger
  13. 1 pinchturmeric powder
  14. 1 pinchhing
  15. as neededSalt and water
  16. Chopped onion (optional)
  17. Chopped Coriander (optional)
  18. as neededOil or ghee

Cooking Instructions

    Soak the dals and seeds with the red chillies, cummin, ginger for 6 hours

  2. 2

    Grind the mixture adding salt, turmeric, hing to a batter.

  3. 3

    Grease the dosa griddle with oil. Spread the batter like dosa. Add oil or ghee as needed. Cook on one side until it browns. Flip and cook the other side.

    You can also add onions and coriander to the batter before making dosa. It makes the dosa more flavorful.

    Serve with chutney and jaggery
