Ingredients

  1. Glutinous rice (soaked over night)
  2. 1.5 tbspcorn flour
  3. Chinese sausage (thinly sliced)
  4. Boiled Eggs
  5. Marinate (overnight)
  6. Mushrooms
  7. 2 stripsPork belly (cut into slices)
  8. 3Chicken legs/thighs (deboned, cut into thin bite size)
  9. 1 tbspSesame oil
  10. 1 tspSoya sauce
  11. 1 tspOyster sauce
  12. 1 tspbrown sugar
  13. 1 tspsalt
  14. 1 tbspshao xing wine
  15. 1 tspcooking oil
  16. sprinkle of white pepper
  17. Sauce For the rice
  18. 1 tspsalt
  19. 1 tspsoya sauce
  20. 1 tspsesame oil
  21. 1/2 tspwhite pepper
  22. 1/2 tspbrown sugar
  23. 3 tbsplard
  24. 3 tbspmushroom water
  25. 1 tbspoyster sauce

Steps

    Wash the rice and soak it in water for overnight.

  2. 2

    Soak the mushroom in warm water for 10 mins, reserve the water.

    Marinate all the ingredients (including mushroom) and mix them all well.

    Then remove the mushroom from the marinate, add corn flour to the marinate. Marinate over night.

    Next day. Remove the water and use just enough water to cover the rice. Steam the rice for 15 mins on heat 7.

    Prepare the boil egg (medium heat with lid cover cook for 10 mins).

    Once the rice is steamed then add the sauce ingredients to the rice and mix well.

    Prepare a few small rice bowl, add marinated chicken, pork, egg, mushroom and Chinese sausage at the bottom, topping with the rice, press it down.

    Place the bowl in the steamer and before you steam them, add 1 tbsp of mushroom water onto each rice bowl.

    Steam the rice for 30 mins on heat 7.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
