This is a baked meatloaf recipe that can be made with ground beef, pork, or chicken. If you like, you can add a hard-boiled egg in the center, German-style.

Prepare and measure all the ingredients.
In a mixing bowl, whisk together the milk, beaten egg, salt, pepper, garlic, oregano, and cilantro. Add the breadcrumbs and mix well.
Add the ground meat, onion, and red bell pepper. Mix until everything is well combined.

Lay out the bacon slices side by side on a sheet of parchment paper.
Place the shaped meatloaf in the center and wrap it with the bacon. Use the paper to help roll it up tightly.

Place the wrapped meatloaf on a rack set over a baking sheet.
Pour water into the baking sheet to catch the bacon drippings and prevent them from burning and smoking.

Bake the meatloaf in the oven at 350°F (176°C) until the bacon is nicely browned.
Slice and serve immediately with the juices from the pan.
