Steps

Peel and dice the carrots, celery, and onion. Cut the tomatoes and cabbage into chunks, slice the chili pepper, and crush the garlic. Set aside.

Trim excess fat from the beef short ribs and cut into pieces.

Heat a pan and sear the beef short ribs (fat side down first). Add salt and black pepper, and cook both sides over medium heat until browned and fragrant (about 2 minutes per side). Set aside.

Without washing the pan, add olive oil and sauté the onion until it becomes translucent.

Add the carrots, garlic, celery, and tomatoes. Stir-fry and season with salt, black pepper, and Italian seasoning.

Once the vegetables are softened, add the sautéed ingredients, beef, cabbage, broth, and tomato paste to the pot. Stir well.

Cover and simmer over medium-low heat for about 55 minutes. Before serving, sprinkle with black pepper and Italian seasoning.
