Pancake Mix Cream Cheese Apple Cake

I made an apple cake using my favorite cream cheese.
It's made even easier by using pancake mix.

After baking for about 25 minutes, check on it. If it looks like it might be about to burn, cover with foil and continue baking.
Adjust the baking time according to your oven.

If you use half an apple, it will be fluffier and the cream cheese taste will be stronger. If you use a whole apple, the apple taste will be dominant. Recipe by Komomomomo

Ingredients

6 servings
  1. 100 gramsCream cheese
  2. 50 gramsSugar
  3. 1Egg (large)
  4. 100 gramsPancake mix
  5. 1Apple

Cooking Instructions

    Put the cream cheese in a bowl and wrap with plastic wrap. Microwave (at 500 W) for about 50 seconds to soften, then beat with a whisk.

    Add the sugar and mix until smooth.

    Add the egg and mix.

    Add the pancake mix and fold with a rubber spatula until there are no flour streaks.

    Cut the apple into about 5 mm thick wedges and mix it into the batter.

    Line the pan with kitchen parchment paper and pour in the batter. Smooth the top of the batter. Holding the pan with both hands, hold and drop it a few times onto a table to remove any air bubbles in the batter.

    Bake in an oven preheated to 180° Celsius for about 35-45 minutes. (See Helpful Hints) When a skewer or toothpick inserted in the middle comes out clean, it is done.

    I added 30 g of rum raisins to boost the flavor! You can also use regular raisins if serving to children.
