I usually make this simmered red sea bream for my family.
It's very simple and delicious and my family likes it very much.

There isn't much sauce, so watch the heat and make sure it doesn't burn.
I used store bought ginger in a tube, but you can use freshly grated ginger. Recipe by Kanchan1210

Ingredients

2 servings
  1. 2Red sea bream fillets
  2. 1 tspGrated fresh ginger
  3. ★ Sauce ★
  4. 100 mlWater
  5. 50 mlSake
  6. 3 tbspMirin
  7. 1 1/2 tbspSoy sauce

Steps

  1. 1

    Score the fish skin.

    Add all ingredients for the sauce plus the ginger into a pot.

    Add fillets with the cuts facing up, and turn the heat to medium.

    When the sauce is slightly boiling, use a spoon and pour over the cuts for a few times.

    Cover with a small lid so that it sits on top of the fish (otoshibuta) and simmer for 10 minutes over low to medium heat.

    Plate and serve.
