Ingredients

6 servings
  1. Classic Tomato and Basil
  2. 2points of grape tomatoes halved lengthwise
  3. 4 clovesgarlic finely minced
  4. Basil chiffonade finely
  5. Balsamic Vinegar drizzled to taste
  6. White Bean and Tomato
  7. 1 cancannellini beans
  8. 1large tomato diced
  9. 2 clovesgarlic finely minced
  10. Juice of one lemon
  11. Salt and pepper to taste
  12. Marinated Zucchini Spread
  13. 1large zucchini grated
  14. 1 tbspolive oil
  15. 2 tbspchopped green olives
  16. Fresh thyme to taste
  17. Salt and pepper to taste

Steps

  1. 1

    For the Classic Tomato and Basil
    Combine all ingredients in bowl and season with salt and pepper.

    For the White Bean and Tomato
    Combine all ingredients and season with Salt and Pepper

    For the Marinated Zucchini Spread
    Heat olive oil in pan over medium heat. Add grated zucchini
    Saute until tender and remove from heat.
    Combine rest of ingredients and add zucchini. Mix. Season with salt and pepper
    Store in airtight container and refrigerate overnight.

    Add any toppings you may want to the board. The possibilities are endless. I did mozzarella, salame, prosciutto, and arugula.
