Ingredients

Approx
  1. For Thandai Masala
  2. 25Almonds
  3. 15Pistachios
  4. 2 TbspMuskmelon Seeds
  5. 2 TbspPoppy Seeds
  6. 1 TbspFennel seeds
  7. 1 TbspBlack peppercorns
  8. 8-10Green cardamom
  9. 2 TbspGulkand (Rose Jam)
  10. 1 Cupwater for soaking
  11. For Sugar Syrup
  12. 450 gmsSugar
  13. 200 mlwater

Steps

20-25 Minutes
  1. 1

    (1) For Thandai Masala-
    Soak all ingredients except Gulkand in 1 cup water. For 8 hours or overnight.

  2. 2

    Peel soaked almonds.Make fine paste of all soaked ingredients and gulkand using the same water in which it was soaked.

  3. 3

    (2) For Sugar Syrup -
    Heat a pan add sugar and water, let it come to a boil on low medium flame. Keep stirring till the is sugar completely dissolved.

  4. 4

    Now add fine paste to this sugar syrup and combine well and cook for another 10 minutes on low medium flame.

  5. 5

    Let it cool down completely now transfer this in air tight bottle & store it in refrigerator or cool & dry place. You can use upto 6 months.

  6. 6

    Add a few tablespoons of this syrup to a glass of chilled milk or water and your scrumptious Thandai is ready in no time. Garnish it with some dried Rose petals.
