This mixed chutney made with tomato, onion, and peanuts is very delicious. You can enjoy it with dosa, uttapam, or idli.

First, roast the peanuts and remove their skins. Chop the tomatoes and onion. Gather the curry leaves and garlic.

Heat oil in a skillet. Add mustard seeds and cumin seeds and let them splutter. Add garlic and onion, and sauté for 2 to 3 minutes. Then add green chilies, salt to taste, and tomatoes. (If you have dried red chilies, you can use them instead of green chilies.) Cook until the tomatoes are soft.

Let the mixture cool, then blend it in a mixer to make a chutney. Coarsely grind the roasted peanuts separately, then mix them into the chutney. Do not add extra water.

Your tomato, peanut, and onion chutney is ready. Serve it with South Indian dishes. It keeps well for several days and is great to take along when traveling.
