Mathri is an all time favourite snack . It can be made healthier by baking instead of frying. Adding veggies or greens also increses it's nutrition. So I baked these Mathris with pumpkin paste and added my favourite spices. It was super tasty!

Mathri is an all time favourite snack . It can be made healthier by baking instead of frying. Adding veggies or greens also increses it's nutrition. So I baked these Mathris with pumpkin paste and added my favourite spices. It was super tasty!
Steps

First, puree the cooked pumpkin into smooth paste. Then add all the spices and again blend to smooth paste.

Now, preheat oven to 170°c. Grease and line a baking tray with greased parchment paper.

Then sieve alll the dry ingredients twice in a bowl. Then add hot oil or ghee and rub the flour till the texture appears like breadcrumbs. Then add the pumpkin paste and mix well.

Then knead to a tight dough with cold water.(only if needed) Keep it covered for 5 minutes.

Then roll it out to 1" thickness and cut into squares and triangles using any cutter or mold. Shape can be of your choice.

Place on the tray with a distance in each piece. Brush with oil. Bake for 25 to 30 minutes till crisp and golden. Turn over and brush the bottom side with oil, after 15 minutes to let the top side bake as well from base. Baking time will be different for each oven so keep a watch after 20 minutes.

After it is baked, remove from oven and cool on a stand till crisp. If not baked fully, bake again for 5 minutes.

Store after cooling in airtight container and enjoy with afternoon tea!
