Belgian Waffles

This recipe is from the "boerinnenbond kookboek", the "bible" cookbook of the Flemish farmers association. They are best served warm with icing sugar. The leftovers you can eat for breakfast the next day with jam on top. Store them overnight someplace cool covered with a towel.
We eat them as a wholesome meal but you can also serve them as a dessert. In that case use a waffle iron with a bigger grid and use whipped cream, ice cream and warm cherry sauce as topping.

Ingredients

  1. 1 kgflour
  2. 1 bottleDuvel (Belgian golden ale) or a similar quality beer
  3. 750 mlmilk
  4. 6eggs
  5. 120 grfresh bakers yeast
  6. 1 teaspoonsalt
  7. 375 grbutter

Cooking Instructions

30 minutes

    I use a kenwood food processor, add all ingredients in the bowl, soften the butter first in a microwave at low power.

    Let it turn at medium speed for ten minutes until all cloths are gone.

  3. 3

    Let it rest for approximately 30 minutes, or until the dough reaches the edge of the bowl.

    Bake in a waffle iron, use 1 full ladle of dough at a time.

    Serve with icing sugar.

I grew up in Brussels & always wondered why even restaurant Belgian waffles were not as I remembered. This recipe tells me why. Can't wait to try it!
