A super yum masala that goes very well with Dosas, Puris and Chapatis. This one is simple and easy too. It tastes awesome with everything. It can even be a spread on the Bread slices or Sandwiches too. A versatile dish or a Sabzi that's easy as well as delicious. Plus it's absolutely healthy and a good one for the growing children. It becomes a way lot easier to feed them this lovely vegetable because all of them love it. It's one of the most favourite of almost all the children. One of the most liked side dishes, it therefore is a parmesan feature at many a breakfast tables.

Steps

Boil Potatoes using little Salt and two tablespoons of Milk. Peel and dice them into small cubes.

Heat Oil in a Kadai and add Asafoetida and Dry Red Chillies. Now add Black Mustard Seeds. After they crackle, add Curry Leaves and shredded Ginger. Also add Bengal Gram or Chana Daal. Keep the heat on a low.

Now add sliced Onions and saute until translucent. Next add the Green Chillies, Salt and the Potato cubes. Cover and simmer for 10-12 minutes on low heat only. Stir in some homemade Dry Mango powder or Amchur.

After 10 minutes, sprinkle Garam Masala (it is optional) and garnish with Coriander Leaves. Serve it piping hot with your favourite dishes. Enjoy!
