Aloo & brinjal fry curry
Steps

Firstly cut brinjal in a salt water and wash it clean keep a side

Take a kadai/ pan add oil and heat it now add mustard & cumin seeds to it & add chopped onions let it fry for 2-3 mins

Add curry leaves, turmeric powder, ginger garlic paste and mix it well. Cook it for 1 min

Now add chopped brinjal & chopped potatoes mix. It well. Now add tomatoes to it.mix it

Let it cook for 3-4 mins now add salt & red chilli powder to taste. Let it cook upto 20-25 mins. Don't forget to mix in middle. Cook in a low flame.

Brinjal & potatoes it's get cooked easily. Check the curry in middle.

Add coriander leaves and mix it. Off the flame..
{Note} : you should cook in a low flame only. - 8
Now serve it with hot rice yummy & tasty aloo brinjal curry gets ready
