Puri: put the flour in a utensil then add crushed carom seeds

Next add salt, sugar and oil in the flour
- 3
Add water as per required and make a not so tight and not so soft dough

Add a very little amount of oil in it to give the dough moisture and cover the lid,keep it aside for good 20-30 minutes

After 30 minutes it's good to go make small balls from it and flatten it and roll it evenly from centre(ps: size can be according to yourself)

Healt the oil in a frying pan for a good couple of minute

Then add Puri and fry them,remember to press the Puri downward in the oil but don't press too hard or else holes can be formed in puri

Wallah!! Puri is done☺️

Chole- wash and soak the chickpeas for at least 8 hours then put it in a pressure-cooker for boil

Add little bit salt in it and potatoes(optional).

Close the lid and boil it for 3-4 whistles.

Next,add ghee in a frying pan and then add cloves,cardamom,cinnamon,red drychillies in it.

Next add some cumin seeds in it.

Next add smashed ginger and fry it for 10-12 seconds

At this moment add the green chillies and fry it for another 7-10 seconds,remember to keep the flame in between medium to high.

Now add chopped tomatoes and give it a good stir till the tomatoes becomes soft.

Now add the powders such as turmeric,coriander and red chilli powder and fry it for 5 -7 minutes.

Now add salt as per your taste and add boiled chickpeas and potato(optional)and fry it for 5 minutes.

Now add water in it according to your gravy consistency.

Close the lid and bring it in a boil and woohoo!

Don't forget to garnish it with coriander leaves and 2tsp of ghee in it.
