I love snowball cookies. Since almond powder is pricey, I left it out and came up with this easy recipe using vegetable oil.

These cookies are fragile fresh from the oven, so coat them in the powdered sugar after they cool.
You can omit the salt, but I think they taste delicious with a tiny bit. Recipe by OyukarinO

Ingredients

  • 130 gramsCake flour
  • 65 gramsVegetable oil
  • 50 gramsSugar
  • 40 gramsCornstarch (or katakuriko)
  • 1Powdered sugar
  • 1 pinchSalt (optional)

Steps

  1. 1

    Line a baking tray with parchment paper. Preheat the oven to 170℃.

  2. 2

    Combine the dry ingredients except for the powdered sugar in a bowl, and mix with a whisk to eliminate any lumps. Add the vegetable oil, and mix with your hands.

  3. 3

    Once it comes together, shape the cookies into 2 cm diameter balls.

  4. 4

    Bake for 20 minutes at 170℃. Once they cool, coat them in powdered sugar and they're done.
