A colleague's grandmother grew a lot of scallions and gave me a bunch! I wasn't sure how to use them all quickly, but they are perfect for this scallion braised dish!

A colleague's grandmother grew a lot of scallions and gave me a bunch! I wasn't sure how to use them all quickly, but they are perfect for this scallion braised dish!

Season the ribs with salt and black pepper; cut the scallions into sections, separating the white and green parts; slice the ginger; peel the garlic, no need to chop; prepare the chili pepper.

Briefly sauté the aromatic ingredients; sauté the white parts of the scallions as well; set aside.

Use the remaining oil to sear the ribs until browned; set aside.

In a deep pot, place the sautéed aromatic ingredients first, then layer the ribs on top.

Add the listed sauces: Shaoxing wine, soy sauce, oyster sauce, dark soy sauce, and ketchup; then add water until just below the level of the ribs (do not cover the ribs).

Once it boils, add the remaining green parts of the scallions to cover the ingredients; cover with a lid and simmer on low heat for 20-30 minutes (until the sauce reduces); finally, turn up the heat to thicken the sauce, and enjoy!
