My hubby is a huge fan. This can be baked with extra cheese on top. Or be eaten straightaway without baking.

In a pot on medium heat, add water and bring it to a boil. Then add the salt and pasta. Cook pasta as per the packet instructions.

To make the white sauce. In a medium sauce pan on low heat, add the butter and let it melt. Slowly add the flour bit by bit. Keep stirring continuously until a paste forms. Continue cooking and stirring for a couple more minutes. Now add the milk very gradually. Stir gently until it develops into a smooth consistency. Add the grated cheese bit by bit along with a sprinkle of grated Parmesan (optional).

Stir continuously until cheese has melted. Season to taste with salt and pepper and stir. Taste and adjust if necessary (add more salt and/or pepper). Lastly add a sprinkle of chopped parsley and give it a final stir. Once the white sauce has thickened and the pasta has cooked, using a slotted spoon transfer the pasta into the white sauce. Mix the macaroni pasta into the sauce ensuring it is coated all over.

Transfer pasta into a serving bowl (pasta bowl) and sprinkle over black pepper and breadcrumbs (optional). Serve and eat immediately while hot.
