Wash the pork and let it drain.

Roast the tomatoes and toast the chiles. Blend them with the garlic, onion, salt, and pepper, adding enough water to make a thick sauce.

Cut the potatoes into wedges.

Prepare the parchment or foil for the mixiotes. Divide the pork and potato wedges evenly among 5 portions.

Pour the sauce over each portion and wrap them up into packets.

Steam in a steamer for about 40 minutes, until cooked through. They're ready to eat.
