  1. 1.1 lbspork loin (about 500 grams)
  2. 1.1 lbstomatoes (about 500 grams)
  3. 6spicy guajillo chiles
  4. 1/2onion
  5. 2 clovesgarlic
  6. 5white potatoes
  7. pepper, to taste
  8. salt, to taste
  9. as neededwater
  10. as neededparchment paper for mixiotes or aluminum foil

    Wash the pork and let it drain.

  2. 2

    Roast the tomatoes and toast the chiles. Blend them with the garlic, onion, salt, and pepper, adding enough water to make a thick sauce.

  3. 3

    Cut the potatoes into wedges.

  4. 4

    Prepare the parchment or foil for the mixiotes. Divide the pork and potato wedges evenly among 5 portions.

  5. 5

    Pour the sauce over each portion and wrap them up into packets.

  6. 6

    Steam in a steamer for about 40 minutes, until cooked through. They're ready to eat.
