Steps

Wash & soak brown rice for nearly 30 minutes.

Heat oil in a pan. Add all whole spices and let them crackle on low flame.

Add onions and cook it till they turn translucent.

Add carrots, beans and potato. Stir them well for 2 minutes. Now add rice and salt. Cook for 2 more minutes.

Add water and let the water boil. Simmer and let the rice cook on low medium flame till fully cooked and done.

Garnish with chopped mint leaves and coriander leaves and lemon juice.

After plating, top it with some pomegranate seeds,mint leaves, brown onions cashew nuts. Sprinkle some sesame seeds on the top. Serve with curd.
