Ingredients

25 minutes
2 people
  1. 1 cupbrown rice (I used organic brown sona masuri rice)
  2. 1/2 cupcarrots sliced
  3. 1/2 cupfrench beans sliced
  4. 1small potato
  5. 1onion sliced
  6. 1cinnamon
  7. 1bay leaf
  8. 2cloves
  9. 1cardamom
  10. 8-10black peppercorns
  11. 1 tspcumin seeds
  12. 1 tbspbrown onions
  13. handfulcashews roasted
  14. 1 tbsppomegranate seeds
  15. as required few mint
  16. As required some coriander leaves chopped
  17. 1 tbsptoasted sesame seeds
  18. as per taste salt
  19. 1 tsplemon juice
  20. 1 tbspoil
  21. 3 cupswater

Steps

25 minutes
  1. 1

    Wash & soak brown rice for nearly 30 minutes.

  2. 2

    Heat oil in a pan. Add all whole spices and let them crackle on low flame.

  3. 3

    Add onions and cook it till they turn translucent.

  4. 4

    Add carrots, beans and potato. Stir them well for 2 minutes. Now add rice and salt. Cook for 2 more minutes.

  5. 5

    Add water and let the water boil. Simmer and let the rice cook on low medium flame till fully cooked and done.

  6. 6

    Garnish with chopped mint leaves and coriander leaves and lemon juice.

  7. 7

    After plating, top it with some pomegranate seeds,mint leaves, brown onions cashew nuts. Sprinkle some sesame seeds on the top. Serve with curd.
