A spicy street food from South India in which spiced Potato balls are dipped in batter and deep fried. These are very much similar to the Maharashtrian Batata Vadas. It is a lovely tea-time snack that can be served with any Chutney of your choice, although these taste yummy even on their own. These can be packed when travelling too and can be enjoyed at Tea-time. Not only is it easy to make, it's absolutely amazing with Green Chutney. It's a must have for Iftaar in Hyderabad. And we all love to have them while breaking our fast. This is quite a good option because the same Potato mix that I use for Aloo Samosas is used by me even for these lip smacking Aloo Bondas as well. So whenever I make one of it, the next day I make the other one too. That means two birds in one shot. Isn't that wonderful? So let's get on with the recipe folks

Ingredients

25-30 minutes
5 servings
  • 4-5Potatoes boiled and mashed
  • 1 tspSalt or to taste
  • 1 tspRed Chilli powder
  • 2-3Green Chillies finely chopped
  • 1 bunchCoriander Leaves chopped
  • 2Onions finely chopped
  • 1 tspCumin powder
  • 1 tspDry Mango powder or Amchur
    Sun-dried Mango Powder or Amchur
  • 1/8 tspAsafoetida or Hing
  • 1 tspBlack Mustard Seeds
  • FOR THE BATTER -
  • 2 cupsGram Flour or Besan
  • 3/4 cupButtermilk or water
  • 1/8 tspBaking Soda
  • 2-3 tbspchopped Coriander Leaves
  • 1/2 tspTurmeric powder
  • 1 tspGinger Garlic Green Chilli paste
    Homemade Ginger Garlic Green Chilli Paste
  • as neededOil for frying

Steps

25-30 minutes
  1. 1

    Make a thick batter using all the ingredients mentioned for the batter. Use of Buttermilk depends upon the quality of the Gram Flour or Besan. Therefore use it accordingly.

    Beat the batter well with a spoon or a whisk so that Gram Flour mixes really well. And fluffy, super spongy Bondas will be the outcome of it. Set aside for 15 minutes.

  3. 3

    Heat Oil and add Mustard Seeds along with Asafoetida. Fry for a minute and then add chopped Onions and the rest of the powdered spices too. Saute until done. To the boiled and mashed Potatoes, add this and mix well. Make medium sized round balls of equal size. Heat enough Oil for frying on a medium flame.

    Dip the spiced Potato ball in the batter and slide into the hot Oil carefully. Deep fry on low to medium high heat until nicely done. Serve these spicy Aloo Bondas with Green Chutney or any dip of your choice.
