Boondi ladoo
A Indian sweet made with gram flour batter.
Steps

In a mixing bowl sieve gram flour, add water(little at a time) and mix for at least 3-4 minutes until smooth. Consistency of the batter is really important to make perfect batter.

Add food colour and mix well. Keep the batter aside to rest for 10 mins.

For making sugar syrup add sugar and water in a pan. keep the pan on low flame and stir until it comes to a boil. Cook for another 2 mins and switch off the flame. (Make sugar syrup in the meantime while frying boondies).

Heat ghee in a wok, keep the flame medium. Oil should be medium hot. Take a dry perforated ladle and place it above the hot oil. Pour some batter on the perforated ladle with spoon(clockwise). Allow the batter to drop by itself.Fry the boondis until crisp. Do not over frying. When the oil stop sizzling take them out in a plate.

After each batch wipe the perforated ladle from both sides to get perfect shaped of boondi again.

Strain the fried boondi well with slotted spoon and add into hot sugar syrup. Also add melon seeds, cardamom seeds and mix well. Cover it for at least 30 minutes to soak the sugar syrup. After that mix the mixture again and shape them to laddu. Delicious boondi laddu is ready to serve.
