To make rice
Boil water and add some salt. Add 1 tablespoon lemon juice and some oil. As soon as water starts to boil add rice.
Let it cook till it is cooked till 80% cooked. Now strain the rice and remove excess water. Your rice is ready. - 2
To make tomato puree
In a kadhai add oil and ghee and let it heat. Then add cardamom, clove, cinnamon stick and let it sauté for a minute or two. Add some cumin seeds, asafoetida and let it sauté. - 3
Then add some onions and curry leaves and let it sauté till it turns light golden brown on medium flame. Add ginger and garlic paste and let it saute till raw smell goes away.

Then add in tomato purée, coriander cumin powder, turmeric powder, garam masala, red chilli powder, salt and mix well.

Let it cook till water of tomatoes is soaked.

Then add chopped tomatoes, garam masala and mix well and cook for a minute or too. Then add cooked rice, spring onion and mix well. Let it cook for 2 minutes on medium flame.

Your tomato rice is ready to be served. Turn off flame.

Serve it in a serving bowl. Decorate it with some chopped spring onions on top.
