World's easiest pasta sauce

I can't definitively say this is the world's easiest pasta sauce, but I can't imagine it gets much easier. It paired great with cheese tortellini, readymade, of course (making tortellini from scratch would defeat the purpose of the world's easiest pasta sauce).

Ingredients

  1. 3 clovesgarlic, finely sliced
  2. 1/4 tspred pepper flakes
  3. 2 tbsptomato paste
  4. 300 gcherry tomatoes, halved
  5. 1 tbspsour cream

Cooking Instructions

    Add a good glug of extra virgin olive oil to a medium pan on medium-high heat. Add the garlic and pepper flakes and let fry for 30 seconds (you don't want to brown the garlic). Add the tomato paste and continue frying for 2 or 3 minutes. Add the tomatoes, a good pinch of salt and a few grinds of black pepper, and turn the heat down to medium-low. Let simmer for about 5 minutes until the tomatoes break down.

    Cook your pasta. Add a few ladlefuls of pasta water to the pan of sauce and stir until emulsified. Give it a taste and adjust the seasoning. Add the pasta once cooked, then stir in the sour cream. Before serving, sprinkle with a few hand-torn leaves of fresh basil and a shower of freshly grated parmesan cheese.
